Roast Vegetables with Chicken Thighs

Serves: 2

Prep time: 10 mins

Cook time: 40-45mins

Ingredients:

  • 1 tbs extra virgin olive oil

  • ½ red onion

  • 1 sweet potato

  • 1 carrot

  • 1 zucchini

  • 2 cloves of garlic

  • 1 red bell pepper

  • 2 tbs fried rosemary

  • 1 tbs sea salt and black pepper

  • 4 chicken thighs

Method:

  1. Preheat oven to 180C

  2. Cut up vegetables in a dish and drizzle with olive oil. Add in dried rosemary (and any other dried herbs you like) and season with salt and pepper. Add in chicken thigh fillets that you have cut in half

  3. Roast vegetables for 40-45mins. Turn them every 15-20mins

  4. Enjoy
