Healthy Wholemeal Banana Bread

Ingredients
- 3 bananas (ripe)
- 1 ½ cups whole meal plain flour
- 1/4 cup manuka honey
- 2 eggs
- 2 tsp baking powder
- ¼ cup extra virgin olive oil
- 1/3 cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup walnuts (cut into small pieces)
- Optional toppings: 1/8 cup of pumpkin and sunflower seeds and 1 teaspoon brown sugar
Method
- Preheat oven to 180 degrees Celsius
- Grease and line a loaf pan with grease proof paper
- In a bowl, mash all 3 bananas with a fork.
- Add the rest of the ingredients and mix until mixture is combined
- Pour batter into loaf pan
- If using optimal toppings, mix mixed seeds with brown sugar and sprinkle on top.
- Place on middle shelf of the oven
- Bake for 40- 45minutes or until a skewer inserted into the centre of the banana bread comes out clean.
